Raspberry Vanilla Overnight Oats

  • 2 cups Raspberries
  • Breakfast Foods
  • 3 cups Rolled oats
  • Canned Goods
  • 3 1/4 cups Coconut milk
  • Condiments
  • 1 tbsp Maple syrup
  • Baking & Spices
  • 2 tbsp Chocolate chips, mini
  • 1 1/2 tsp Vanilla extra

Instructions

  1. Stir together the coconut milk, maple syrup, and vanilla extract.
  2. Add the oats and stir.
  3. Put half the oat mixture in the bottom of each jar, then add a layer of raspberries.
  4. Top with the remaining oatmeal and raspberries.
  5. Sprinkle with chocolate chips.
  6. Refrigerate overnight.
  7. In the morning, these can be served cold, or you can heat them briefly on the stovetop. (Note: If you’re heating them, you may want to add the chocolate chips after they’ve been heated.)

  • 1 tablespoon butter
  • 1/2 medium yellow onion, chopped
  • 4 eggs, lightly beaten
  • 1 cup half-and-half

•1 egg
•2 tablespoons butter, melted
•1 teaspoon vanilla extract
•¾ cup milk
•1 cup flour

PREPARATION

1.Peel the apple and slice into 2 cm thickness.
2.Using a teaspoon, cut out the core of the apple and place apples in a medium bowl.
3.Mix in cinnamon and coat each apple ring.
4.In a large bowl mix egg, butter, vanilla extract and milk with a whisk.
5.Sift in flour, baking powder, cinnamon and salt and mix the batter. It is ok to leave lumps.
6.Heat pan on medium heat and melt butter. Dunk each ring into the batter and place on pan.
7.Wait until bubbles form on the batter, then flip.

Layered Ham And Cheese Potato Bake

PREPARATION

1. Preheat oven to 350°F/180°C.
2. Slice the peeled potatoes into ½-centimeter slices.
3. Season the potatoes with salt and pepper, tossing them to make sure they’re coated evenly.
4. Press a layer of potatoes evenly into the bottom of a greased, square baking pan.
5. Place half of the ham slices evenly on top of the potatoes, followed by half of the sliced cheese.
6. Follow with another layer of potatoes, then the remaining ham and sliced cheese.
7. Sprinkle the bacon and parsley evenly on top of the sliced cheese, and place one final layer of potatoes on top.
8. Sprinkle the shredded cheese on top of the potatoes, then press it into an even layer.
9. In a small bowl, mix the heavy cream and eggs. Pour on top of the shredded cheese.
10. Bake for about 40 minutes, until the cheese is a deep golden brown.
11. Cool slightly, slice, then serve!

INGREDIENTS

•Servings: 8
•1 pound steak (flank, skirt, or flat-iron)
•1 teaspoon salt
•½ teaspoon pepper
•½ teaspoon chile powder
•½ teaspoon oregano
•½ teaspoon garlic powder
•½ teaspoon cumin
•8 eggs, beaten
•Salt, to taste
•Pepper, to taste
•1 tablespoon butter
•8 small flour tortillas
•8 hard taco shells
•1-2 cups grated cheddar or jack cheese
•Optional toppings
•1 cup salsa
•1 avocado, sliced
•Crumbled queso fresco
•Cilantro
•Scallions

PREPARATION

1. Combine the cumin, chili powder, garlic, oregano, salt, and pepper in a small bowl. Rub all over the steak.
2. Heat a large sauté pan over high heat until very hot. Add a splash of vegetable oil. Add the steak to the pan and cook 3-4 minutes per side for medium, or cook to desired doneness. Remove from pan and let rest at least 10 minutes. Thinly slice against the grain.
3. Preheat an oven to 350˚F/175˚C.
4. Place the flour tortillas on baking sheets. Sprinkle each with a small amount of shredded cheese, then place one hard taco shell inside. Heat just until cheese melts, about 3-5 minutes.
5. Heat a nonstick pan over medium heat and add butter. Scramble the eggs and season with salt and pepper.
6. To assemble, fill each double-decker shell with a few spoonfuls of scrambled eggs and a few slices of steak. Top with salsa, avocado, queso fresco, cilantro, and scallions.
7. Enjoy!

Breakfast Braid

INGREDIENTS

•Serves 7
•10 ounces chorizo
•4 eggs
•1 cup cheddar cheese, shredded
•½ cup onion, diced
•1 cup bell pepper, diced
•2 tablespoons vegetable oil
•1 tube biscuit dough
•Egg wash
•Flour for dusting

PREPARATION

1. Preheat oven to 375˚F/190˚C.
2. Heat the oil in a frying pan. Add the onion and stir until translucent. Add the chorizo.
3. Cook for about 5 minutes, stirring occasionally. Add the bell peppers and stir.
4. Beat the eggs until the yolks break and add them to the chorizo mix.
5. Stir until the eggs are just cooked .
6. Flour a surface and open a tube of biscuits. Place them close to each other. Roll them out with a rolling pin to create one single dough.
7. Sprinkle cheddar cheese over the rolled biscuit dough. Add the chorizo and eggs. Roll it up and pinch the edge to seal it to the roll.
8. Brush the roll with egg wash.
9. Using scissors, make slits in the dough about 2 inches apart from each other. Then twist them to alternating sides to create a braided look.
9. Bake for 25 minutes, or until golden brown.

Freezer-Prep French Toast Sticks

PREPARATION

1.Preheat oven to 350°F/180˚C.
2.Spray a large baking sheet with cooking spray.
3.Stack and slice the Texas toast into thirds.
4.In a large bowl, whisk together eggs, milk, butter, vanilla, cinnamon, salt, and sugar.
5.Dunk each strip of bread into the mixture, allow the excess to drip off, then place on prepared baking sheet. Repeat with remaining strips.
6.Bake in a preheated oven for 15-20 minutes, flipping halfway.
7.Remove from oven and serve, OR let cool slightly and transfer baking sheet to freezer. Once frozen, after 1-2 hours, transfer to a freezer bag for easy storage.
8.To reheat, preheat oven to 350˚F and bake for 10-15 minutes until heated through. OR transfer frozen sticks to a plate and microwave 45-60 seconds.

Breakfast Onion Cups

INGREDIENTS

•Servings: 6
•2 cups broccoli florets, minced
•1 cup cheddar cheese, shredded
•7 eggs
•5 strips bacon, cooked and diced
•1 large red onion
•1 teaspoon salt
•½ teaspoon pepper
•½ teaspoon chili powder
•2 tablespoon milk
•Garnish
•Parmesan cheese

PREPARATION

1. Heat oven to 400˚/200˚C.
2. Mix eggs, milk, and spices in large mixing bowl.
3. Add broccoli, bacon, and cheese, and continue mixing until all ingredients are well incorporated.
4. Cut ends off the red onion and then slice in half. Gently pop out rings, using desired size.
5. Heat cast-iron pan on low and place onion rings in the pan.
6. Spoon in small amount of egg mixture and press on the onion ring create a seal, then repeat for all rings. Pour the remaining mixture filling to just about the top of each ring.
7. Cover with foil.
8. Place in oven and cook for 25 minutes, or until eggs are cooked through and slightly puffed and onion rings are tender.
9. Remove from pan immediately and sprinkle with desired topping.

Bacon Lattice Breakfast Pie

•Servings: 4-6
•5 eggs
•1 cup whole milk
•1 teaspoon salt
•¼ teaspoon pepper
•¼ cup green onions, chopped
•½ cup cheddar cheese
•1 pie crust
•10 slices bacon

PREPARATION

1.Preheat the oven to 350°F/180°C.
2.In a medium-sized bowl, whisk the eggs, milk, salt, and pepper.
3.Add in the green onions and cheddar, and mix again.
4.Pour the egg mixture into the pie crust and bake for 35-40 minutes or until set.
5.Increase the oven temperature to 400°F/200°C.
6.Lay the bacon on top of the pie and weave to make a lattice top.
7.Bake again for 20 minutes or until bacon is crispy. Broil for crispier bacon.

Kale, Sweet Potato, and Onion Frittata

INGREDIENTS

•3 large eggs (Men: 5 large eggs), yolks and whites separated
•4 large egg whites*
•1 small (3 to 4 inches long) sweet potato, cut in ½-inch cubes
•2 teaspoons extra-virgin olive oil
•1 small yellow onion, roughly chopped
•Kosher salt and freshly ground pepper, to taste
•2 cups chopped kale leaves (about half of 1 bunch), ribs and stems removed
•½ blood orange (or ½ a small navel orange)
•*You’ll have 4 yolks leftover. You can either discard them, or freeze them to use after the challenge
PREPARATION
1.First, prep the sweet potato, onion, and kale.

 

 

 

3.To separate the eggs from the white, you can use the eggshells, like this:

 

 

 

5.The egg whites should be in a large mixing bowl, and the yolks should be in a smaller mixing bowl.

7.Thoroughly whisk the eggs whites, until they hold stiff peaks.

9.Pour in the egg yolks and whisk very gently just to combine everything, then set it aside in the fridge.

11.Put the sweet potatoes in a large, nonstick skillet. Add a cup of water, bring it to a boil, then reduce the heat to a simmer and cook until the sweet potatoes are soft on the outside and there’s no water left.
12.Add olive oil, onion, and salt and pepper, and cook until the onion starts to soften.
13.Add the kale and cook until it’s dark green and a little soft, then spread the vegetables out and pour the egg mixture in an even layer on top.

15.Cook the frittata until it’s puffed up and set, but still a little jiggly in the middle. It should take 5 to 6 minutes at 450°F. Let it cool for 5 minutes, then flip the frittata onto a cutting board and cut it into 4 pieces.
16.Serve half the frittata with half a blood orange.
17.Let the other half cool completely, then store it in an airtight container in the fridge for tomorrow’s lunch.
